Cartoon of folded peptide
A cartoon showing very (!) schematically what a folded peptide such as α-helical poly-L-lysine looks like in solutions. In the folded form, the residues in the peptide hydrogen bond internally. The surrounding solvent molecules (water and methanol in our case) cannot hydrogen bond with the peptide and instead form a hydrogen bonded structure outside of the peptide.
